Dear Kim,

I have finally come to the point where I am actively seeking out more and more Vegetarian meals. Yea! I have a friend who has a Russian husband and makes Russian Vegetarian meals. I got a Russian cookbook used at amazon.com (and just got it yesterday) and am going to make some, too. There are a lot of Vegetarian recipes in it or ones that could easily be made into them. I also have a new Vegetarian cookbook, Joy of cooking: All About Vegetarian Cooking. I am more excited about eating this way than ever. Last summer's 'situation' probably was linked to lack of knowing what to eat when one is not eating meat, I'm sure. I will begin blogging my recipes as well. Afterall, if you and my other friend helped me, perhaps my blogging about it will help someone else as well. :)

(((Kim))) I pray that you are doing well today, hugs, Robin

P.S. I had authentic gyros in Germany many times. Very good.

Have you found things like the seitan and similar things from local stores? Our Whole Foods is an hour and a half away and we likely won't go there again until December. I am hoping that Kroger will have it.

Yea! You are my hero being able to modify things like that!! Can't wait to see the final recipe...might be something for Lent.

BTW, Robin mentioned a lot of veg. meals in Russian cookbooks--that would be true since Russians are mainly Orthodox and would fast more that 50% of the yr. I have found that looking at Russian sites gives a lot of vegan recipes. Except for the ones used on fish days ::wink::
